Shredded Beef Tacos

Thaw and reheat beef in microwave or on stove top.

Serve with tortilla shells (hard or soft). Top with your favorite taco toppings-cheese, lettuce, tomatoes, black olives, green onions, sour cream, etc.

Bottle Cap Chili (Chunky Chicken Chili)

Thaw and reheat on stove top or microwave.

Top with cheddar cheese, green onions, or sour cream, if desired. Serve with tortilla chips or fritos or cornbread.

Eat alone or serve with your favorite sandwich or salad.

Lite Alfredo Pasta


Thaw. Heat sauce in a saucepan over low heat while pasta is cooking. Drain pasta. Combine pasta and sauce, and serve. If desired, top with grilled chicken.


Serve with salad and garlic bread.

Calzones


Preheat oven to 350 degrees. Place on baking sheet and bake for 30-45 minutes (if thawed) or 1 hour and 15 minutes (if frozen).

Can be reheated in the microwave.


Dip calzones in spaghetti sauce.


Eat alone or serve with a side salad, fresh veggies or fresh fruit.

Freezer Pizza Kits

PIZZA KIT INSTRUCTIONS:

Remove dough from bag, and place in greased bowl. Allow cheese, sauce and pepperoni to thaw in fridge. Cover dough with towel or plastic wrap. Allow to rise twice in the bowl (This will take most of the day. You can also thaw the dough overnight in the fridge, then set it out to rise the next afternoon.). Punch down. Oil cookie sheet and use fingers to press the dough out to edges. Prick the dough with a fork in various places to keep it from bubbling up. Top with sauce, cheese and toppings. You can allow it to rise a little bit before placing in the oven. Bake at 425° for 20 min.

Magic Meat (Where's the Beef Meat Sauce?)


Another versatile meat sauce. Thaw. Reheat.


Meat sauce can be used in a variety of ways: lasagna sauce, sloppy joes, taco meat, stuffed peppers, etc.
Sloppy Joes:

1 1/2 cups of beef sauce
1/2 cup frozen corn kernels
1 green bell pepper, seeded and chopped
1/2 cup ketchup
1 T Dijon mustard
1 T chili powder
2 t dried basil
1/8 t cayenne pepper
4 Kaiser rolls, halved
Spoon meat sauce into a large saucepan. Add corn, green pepper, ketchup, Dijon, chili powder, basil & cayenne pepper & bring mixture to a simmer. Cook 5-7 minutes, until green pepper is soft & mixture is heated through. Spoon mixture onto rolls and serve hot.


Beef Taco with Mango Salsa

2 cups meat sauce
2 t chili powder
1 t ground cumin
2 cups diced fresh mango
1 jalapeno pepper, seeded and minced
2 T minced red onion
2 T chopped fresh cilantro leaves
2 T fresh lime juice
Salt & pepper
8 Taco shells
1 cup shredded Romaine lettuce
1 cup grated Cheddar cheese
1/2 cups sour cream
Spoon meat sauce into a large skillet and add chili powder & cumin. Bring mixture to a simmer over medium heat. Simmer 5 minutes. Meanwhile, in a medium bowl, combine mango, jalapeno, red onion, cilantro, and lime juice. Season, to taste, with salt & pepper. Can substitute your own salsa.


Lasagna:
4 cups ricotta cheese
8 ounces grated mozzarella cheese, divided
1 egg
1/2 teaspoon ground black pepper
12 uncooked lasagna noodles
1/4 cup grated Parmesan or Romano
Preheat oven to 350 degrees.Combine ricotta, half of the mozzarella, egg and black pepper. Mix well.Pour 1 cup of the meat sauce in the bottom of a 9 x 13 lasagna pan. Arrange 4 uncooked lasagna noodles on top of sauce, overlapping noodles slightly to cover the bottom. Spoon half of the cheese mixture over noodles. Top with 1 1/2 cups of meat sauce and 4 more noodles. Top second layer of noodles with remaining cheese mixture, 1 1/2 cups of meat sauce and 4 more noodles. Top noodles with 1 1/2 cups of meat sauce and remaining mozzarella cheese. Top with Parmesan cheese.Cover with foil and bake for 45 minutes. Uncover and bake 15 more minutes, until top is golden & bubbly. Let stand 5 minutes before slicing.


For peppers (shown above) - use 1 lb magic meat, 1 can black beans, 3 peppers in half & cheese to your delight. Bake at 350 for 30 minutes. Add cheese after 30 minutes until melted.

Big O Beef

Thaw. Reheat in microwave or on the stovetop.

This is a really versatile recipe. Can be eaten alone or top on rice, mashed potatoes or noodles. Serve with veggies, fresh fruit and/or salad.

Philly Steak & Cheese Sandwiches:

Preheat oven to 350 degrees.

Need:
French Bread loaves, halved
onions
green peppers
mozzarella cheese, shredded

Saute the onions & green peppers. Place meat, onion/green pepper mix & cheese on one half of the french bread. Bake for 15-25 minutes until cheese melts.

Weeknight Enchiladas


Preheat oven to 350 degrees.
From frozen state: Bake for 1 hour and 30 minutes.
From thawed state: Bake for 20 minutes.
Top with sour cream and your other favorite mexican toppings.
Great on its own or serve with your favorite mexican sides!

Creamy Burrito Casserole


You will need on hand a can of cream of chicken soup and 4 oz of sour cream.

Mix soup and sour cream in a bowl. Spread 1/2 sour cream mixture in the bottom of a casserole dish. Place burrito on sour cream mixture. Top with the other half. Sprinkle cheese over the top and bake, uncovered, at 350°F for 20-30 minutes.
You may omit the sour cream mixture, you may top with cheese and bake, uncovered, at 350 degrees for 20-30 minutes.
If preparing from frozen state, add an extra 30-45 minutes to the cooking time.
Eat alone or serve with Mexican rice, tortilla chips, salad or fresh fruit.

Inside-out Cheeseburgers


Thaw and grill cheeseburgers on grill pan or outdoor grill.
Serve with your favorite toppings.
Try this wonderful sauce-Grilled Green Onion Mayo:

4 scallions, cleaned and trimmed
Extra Virgin Olive Oil
1 cup mayonnaise or low-fat mayonnaise
1 teaspoon ground cumin
salt and pepper

Brush scallions with a little oil and grill on hot grill pan 2 or 3 minutes on each side; remove from heat to cool. To make the green onion mayonnaise, chop cooled, grilled green onions and add to a food processor. Add mayonnaise and cumin to the food processor and pulse the onions and mayonnaise. Season with salt and pepper, to your taste. Pile burgers on crusty buns and top with crisp lettuce leaves and a slather of green onion mayonnaise. (Mayo Recipe from Rachael Ray.)

Serve with fries, pasta salad, or other favorite hamburger sides!

Pork Chops with Apple and Herb Dressing

Thaw completely. Preheat oven to 350 degrees. Bake, covered, for 45 minutes. Uncover and bake 10 to 15 minutes more or until chops are done.

Serve with your favorite veggies and/or salad.

Pumpkin Sausage Lasagna

Thaw. Preheat oven to 375 degrees. Bake for 45 minutes.

If frozen, bake for 1 hour and 30 minutes.

Serve with a salad, veggies & bread.

Honey-Pecan Chicken

To Prepare: Thaw chicken breast and cream sauce. Mix chopped pecans and flour together. Dredge chicken breast in flour mixture. Heat a small amount of olive oil in large skillet. Pan fry chicken breast until golden brown and cooked through. Heat sauce over low heat until warm; do not boil.

To serve, place chicken on individual serving dishes and pour cream sauce over chicken breasts. Serve with seasoned or plan rice, salad, veggies like asparagus, green beans, or broccoli and bread/rolls.

Black Bean Lasagna


Preheat oven to 350 degrees.


From thawed state: Bake for 45 minutes.


From frozen state: Bake for 1 hour and 30 minutes.
Serve with a simple salad and bread.

We created this website for our Friendly Freezer customers to have a place to go to, to find out how to prepare their meals. Each entree will have a label with the entree name and preparations but we realize that they could be damaged in the freezer by moisture or get lost before preparing it for you family.

We will also post along with the entree preparations some suggestions of sides to serve with your entrees.
